If you have fresh peppers on hand, you can simply slice them and use them instead of the frozen variety. Add an onion too.
1 pound linguine pasta
3 cups frozen peppers and onions for stir-fry
1/4 cup olive oil
1/3 cup Parmesan cheese
METHOD |
Bring a large pot of water to a boil. Meanwhile, saute peppers and onions in the olive oil in a large skillet until hot and tender, stirring frequently.
Cook the linguine pasta according to package directions. Drain and add to peppers in skillet. Toss thoroughly and serve with Parmesan cheese.
