Big Joe's Rib Eye Roast



Ingredients:
4 to 6 lbs BEEF RIB EYE ROAST
2 tsp. grated ORANGE PEEL
4 cloves GARLIC, minced
1 tsp. fresh-cracked BLACK PEPPER
1/2 tsp. THYME LEAVES
1 /4 cup SOY SAUCE
1/4 cup TERIYAKI SAUCE
1 cup WATER


Method:

Have butcher cut bone from roast, then tie it. In bowl, combine orange peel, garlic, pepper thyme, soy sauce and teriyaki sauce.

Rub evenly over surface of the roast. Place roast, fat side up, on rack in open roasting pan. Add water to bottom of pan.

Roast uncovered at 350 degrees to desired doneness. Allow 18 to 24 minutes per pound. Let stand for 10 minutes in warm place before carving.
