Ingredients:5 cans Whole Green Chilies, seededMethod:
28 ounces Monterey Jack Cheese (Or suitable melting Cheese)
5 Eggs-beaten
1- 13 ounce can Evaporated Milk
1 tblsp. Flour
Lighty grease the bottom of a 9x13" baking dish. Beat eggs, flour, evaporated milk and salt and pepper to taste and mix well, set aside.
Layer ingredients in following order in baking dish:
1/2 of the chilies, 1/2 of the grated cheese, remaining half of chilies, remaining half of cheese.
Pour egg mixture over top and bake at 350 degrees for 30-35 minutes.
Allow quiche to set for 20 minutes before serving.
