TOMATO CUP GARNISH
Place one tomato cup on each dinner plate for a colorful garnish it is so easy to make
Red Tomatoes, medium sized, one per person
2 Broccoli flowerettes, per person
2 Cauliflowerettes, per person
Steam the broccoli and cauliflower until tender crisp and immediately place in ice water. When cooled, drain on paper towels. Season with salt. Set aside.
Use a sharp knife and make large jagged zigzag cuts all the way around the top one third of each tomato. Remove the jagged top part of the tomato and discard or use for another recipe. Gently remove some of the insides of each tomato leaving a one-half inch wall.
Put two broccoli flowerettes and two cauliflowerettes inside the jagged tomato cup that you just made. They may be covered and refrigerated at this point.
When ready to serve, place one off to the side of each dinner plate.
