Cheese & Tattie Pie

A simple,quick and easy dish for those with little time to spare!

For this, you will need:-

1 large Onion
1/4 lb Parsnips
1 or 2 sprigs of Parsley
1/4 lb Extra Strong Mature Cheddar
Butter (or Margarine if preffered)
A dash of Milk (preferably full-cream)
2 to 3 lb. Potatoes (reds make a better base!)
Brown Sauce to taste.

Black pepper Method:-
Take a large loaf tin, and grease well. set aside.
Spread the parsnips on a greased baking tray, and cook on a low heat for twenty mins.
While this is happening, bring a pot to the boil, and boil the potatoes until soft. Hold a small potatoe back, and slice it thinly. Grate the cheese, and roughly dice the Onion and Parsley, whilst you wait.
Cream the potatoes with a little butter, adding a little milk until the potatoes achieve a creamy smooth consistency.

By now, the Parsnips should be ready to dice. Lightly fry the potatoe slices and diced onion, and set aside. Blend the potatoes, parsley,parsnips, cheese and onions together, adding the brown sauce and black pepper to taste.
Fill the loaf tin with this, and add a little extra cheese on top. Add the fried potatoe slices to garnish.
Set in a medium oven for 30-35 mins, or until the top is golden.

This is delicious, filling and acceptable to most palates :- serves 3 - 4 people. So give them a taste of the country!
