Meze (here's something for those with a Turkish palate)

Serves four

1x Large Onion, chopped roughly.
3x Tblspn. Sunflower Oil
500g Courgettes, finely diced
3x Eggs
3x Tblspn.Plain flour
black pepper
2or3 sprigs chopped Mint
200g Feta cheese (mashed with a fork)
oil (for frying)


Fry the onion in sunflower oil until soft and lightly coloured. Add the courgettes, and saute, stirring until soft. Beat the eggs with the flour until well mixed. Add the black pepper and herbs, and blend thoroughly. Fold feta, onions and courgettes into the eggs.

Lightly oil the frying pan, and add the mixture half a ladle at a time to make a few Meze. Turn each over once, and fry until they are slightly brown. Drain on kitchen towel.
