1/2 cup sugar
12 mint leaves
1/2 cup lime juice
1/4 teaspoon salt
2 large eating apples, pared, cored and cut up
1/2 cup boiling water
1 12-ounce bottle sparkling water, chilled
Put sugar, mint, lime juice, salt, apples and boiling water in blender container; cover and run on speed 5 (or high) until smooth. Cool and chill.
At serving time, fill each of 3 tall glasses half full of apple mixture. Add sparkling water to fill each glass. Makes 3 servings.
