Semolina and Peach Layer

This is a delicious milk pudding layered with cooked peaches
Ingredients
50g (2oz) Durum Wheat Semolina mix
5 ripe peaches
600 ml (1pt) milk
125g (5oz) sugar
rind and juice of 1 lemon
15ml (1tbsp) arrowrootMethod
Blend the Semolina with the 50g (2oz) sugar and enough milk to form a paste
.
Pour the remaining milk into a pan and bring to the boil, then remove from the heat and stir in the Semolina paste. Return to the heat and simmer gently for 10 minutes, stirring occasionally until thickened. Allow to cool.Slice half a peach and reserve for decoration.
Pour boiling water over the remaining peaches then when cool enough to handle, remove the skins.
Roughly chop then simmer with the pared lemon rind, juice and remaining sugar for about 10 minutes. Remove the rind and stir in the arrowroot blended with 15 ml (1tbsp) water. Bring to the boil stirring until the sauce thickens. Allow to cool.
Layer the Semolina with the peaches in dessert glasses and decorate with the reserved peach slices.
