Strawberry Croûtes

Well folks it's that time of year (I believe its called summer) when fresh fruit is at its best and cheapest. Strawberries are just one example. My local supermarket is selling pannets of Strawberries for a £1 each, or buy 2 and get one free!

So you have loads of Strawberries and if you're like me you find them boring just eating them with ice cream. So just for a change why not try out my Strawberry Croûte recipe. This serves 4 unless your greedy then it only serves 2!

 

INGREDIENTS.

225g/8oz of fresh Strawberries.
1 tablespoon of sugar if you have a sweet tooth. You can of course use less.
3 tablespoons of redcurrant jelly. Made from a pack of jelly mix.
4 tablespoons of water.
40g/1½oz of butter.
4 slices of bread with the crusts cut off.


METHOD.

Wash and prepare the Strawberries i.e. nip out the green bit and dry on kitchen tissue/towel. Place the fruit on to a plate and sprinkle with some of the sugar.

Place the jelly and the water into a pan and heat, stirring until the jelly has dissolved. Keep this mix slightly warm.

Heat the butter in a frying pan. Fry the bread until crisp and golden.

SERVING.

Sprinkle the bread with the remainder of the sugar and put onto plates. Top with the fruit and redcurrant jelly sauce. Serve at once.
