Pikelets.

Ingredients


  • One cup of Self Raising flour.
  • A quarter of a teaspoon of Bicarbonate of Soda.
  • One pinch of Salt.
  • Two tablespoons of Sugar.
  • One egg.
  • Half a cup of milk.
  • One teaspoon of Vinegar.
  • One desert spoon of melted Butter.


Method


Put all the dry ingredients in a bowl, and mix them together.  (The Bicarbonate of Soda, and the Vinegar will react if mixed together, so don't put everything in all at once).

Put the remaining ingredients into the bowl, and beat together, until thoroughly smooth.  (It should have a fairly thick consistency, so you may wish to hold back on putting all the milk in at once.)

Pour small helpings into a frying pan greased with butter. (Start with the pan around three hundred and eighty degrees Fahrenheit, then turn it down low.)

If you're wondering what I mean by the reaction between the Bicarbonate of Soda and Vinegar, then drop a bit of both onto the counter top, and watch it fizz.

This is safe, but would probably taste awful if you let them mix this way in the batter.  The Vinegar is really in the recipe instead of using sour Milk, which I don't even like the thought of.
